A quick hearty bean salad. Perfect side or bean addition to a rice bowl!
Directions
Soak 2 cups of black eyed peas in some water for 2 hours
Boil soaked black eyed peas in instapot/open pot of water for 15 mins/until al dente (soft to eat)
Drain boiled black eyed peas and season with Curry Leaf PODI, Crispy Garlic PODI, OG Gunpowder PODI
Add finely diced tomatoes, onions and cilantro to the mix
Garnish with lime/lemon juice. Mix thoroughly and serve!
