We roast our ingredients in specially sourced machines —a method that enhances depth, aroma, and complexity, unlocking each spice’s full potential. Unlike industrial processes that use high heat for speed, our slow-roasting technique preserves natural oils and flavor compounds for that unmistakable homemade taste.
✨ Stone-Milled for Freshness
Once roasted, our spices are ground in traditional stone mills instead of high-speed electric grinders. Why? Because stone milling keeps temperatures low, preserving delicate flavors and nutrients that would otherwise be lost to heat. This method ensures that every spoonful of PODI tastes like it was freshly ground in your own kitchen.

At the heart of our quality assurance is my mom, Vasavi—our in-house taster and the guardian of tradition. She meticulously ensures that every batch meets the high standards of home cooking, balancing flavors with a sharp, practiced palate honed over decades. If it doesn’t taste like something she’d serve at home, it doesn’t leave our commercial kitchen.
Sourcing with Intention
We are committed to consciously sourced, high-quality ingredients—the best we can find in the bulk purchase market. Many of our ingredients are non-GMO, and we take extra care in sourcing our turmeric and black pepper directly from regenerative farms in India. This is an area of continuous improvement for us, by choosing ingredients grown with sustainable and ethical practices, we not only deliver better flavor but also support farmers who are working to heal the land.
