Salmon en Papillote with Citrus & Sambar Sauce

A recipe that is so easy, so full of flavor. High-protein and if you keep a bottle of miso marinade in your fridge, you have dinner ready in 15 mins.
✦ Ingredients
- ✦ 1/3 cup coconut milk
- ✦ 1/3 cup Orange juice (or 1 macerated clementine)
- ✦ 1 tbsp white miso
- ✦ 2-3 tsp Hearty Sambar (vary based on heat preference)
- ✦ 1/2 tbsp honey
- ✦ 1 large fillet of Sea Bass or Salmon
- ✦ 1/2 tbsp ginger (optional, this pairs really well with the rest. Add if you want more warming flavor)
✦ Instructions
- Make your marinade in a jar or bowl - with miso, orange juice, Hearty Sambar, honey and coconut milk.
- Grate ginger into the marinade if you like (optional)
- Shake or mix it thoroughly. This marinade is also great for meal prep cooking.
- Pat your fish fillet dry, place it on a parchment paper (or banana leaf if you have access to it), drizzle 1tbsp of marinade per 100g fish fillet. Feel free to be more generous with this if you want to pair the fish with rice or want a saucier fish.
- Wrap the parchment paper to trap moisture (staple if necessary). Bake in air fryer at 350F for 10-15 mins (vary based on how cooked you want your fish).
- Pair with cooked rice or grilled veggies.
