Strawberry Cucumber Spring Salad

This salad truly sums up Spring for me. Crisp cucumbers, juicy strawberries, with a dressing I can drink out of a glass. Everything about this is perfection! I am making this for friends who visit us this season and we plan to enjoy it while sitting outdoors in the garden. That's exactly what this salad is meant for!


✦ Ingredients

  • Zesty Coriander
  • 3-5 Persian Cucumbers
  • 1 box of organic, fresh, small strawberries
  • 1 tbsp Olive Oil (recommending Brightland's Arise)
  • 1/3 cup freshly pressed Orange Juice
  • 1 tsp wildflower honey
  • 1 tsp sea salt

✦ Instructions

  1. Chop 3-5 persian cucumbers (tender skin) into cubes
  2. De-stem and chop a box of strawberries into halves
  3. Make your dressing - with 1/3 cup freshly pressed Orange Juice, 1 perfect PODI spoon heap of Zesty Coriander, 1 tbsp of a great olive oil like Brightland's Arise (refreshing basil infused oil), 1 tsp wildflower honey, 1 tsp Salt
  4. Mix it all together right before serving. Add in greens if you'd like!
