The History
Rooted in South India
Pongal and Bisi Bele Bath are iconic, comforting spiced risotto-like dishes. Pongal is traditionally made on the South Indian harvest festival day also called Pongal. Bisi Bele Bath originated in the Mysore Palace, in the South Indian state of Karnataka.
They have been an integral part of Indian food culture for 4000 years. As the demand for rice and wheat grew, millets were sidelined. Thankfully, they have been stewarded by smallholder farmers, often from marginalized castes and indigenous communities.
