About Kanakam Dosa Trio

  • Hand-forged by generational artisans (Kanakam brass utensils made by wonderful, third-generation brass artisans and experts at Fleck, custom made exclusively for PODI life in Moradabad, India. Some of the Kanakam Cast Iron pans were small batch forged in Madurai, sourced by curated products, and the rest were forged and bought directly from small makers in Coimbatore, India)

  • Cast iron retains heat more than any other material - this means that when you pour the dosa batter, it doesn’t cool down and enables a perfectly crisp dosa to form.
  • Cast iron is a healthier choice! Teflon coatings of non-stick pans start leaching into your food after some time. From a well-seasoned cast iron pan, very little iron leaches into your cooking and if it does, it just adds to your dietary iron requirement.
  • Its production is environment friendly.
  • Well-seasoned cast iron behaves just like non-stick pans.
  • It’s the closest to the large commercial iron griddles on which dosas are made commercially. 
  • By repeating the seasoning process three times we build these polymer layers gradually and this makes the pan non-stick from the very first use! It also makes the layers relatively long-wearing and the non-stick effect won’t wear off very soon. 
  • We’ve used cold-pressed organic grapeseed oil to season your pan.
  • However no seasoning is permanent! By using the pan often, you keep rebuilding the seasoning layers every time you add oil and heat the pan. This is why used cast iron pans passed down over generations hold so much value! They actually get even better over time! Can you think of anything else that gets better with every use?

Yes! absolutely. Cast iron works on induction, electric and gas stoves.

  • Not if you have all the inside info!
  • You don't have to remember any of the care instructions, we have created easy-to-follow care and maintenance videos to simply follow along. We also a included a little cute fridge magnet with a QR code, so you can easily access the videos in a jiffy!
  • Brass can be cast, forged, spun or stamped. Cast and forged brass are expensive. With these two forms - heat is applied to brass to mold it into shape.
  • These utensils are cast - this means, molten brass is poured into a cast or and then scuffed to give them their beautiful shape. Plated brass is the cheapest form of brass, since plated brass is thinned by a machine into sheets and pressed into shapes.
  • Usually the thicker the walls of brass, the more expensive it tends to be, as thicker articles tend to be handmade.
  • These utensils are made of the purest, food-grade brass!

A dosa dream come true

Our household is a big dosa fan and all kinds of them so after going through many pans I feel I have landed on the one to keep and cherish forever! They say it is all in the details and I see the thoughtfulness and craftsmanship behind this product. From the thickness of the pan to the length of the brass utensils! Amazing products and class

I was on the hunt for a good dosa pan and thats when I saw Podi life start a waitlist for the pan and utensil combo! Received my product in beautiful packaging and condition. They truly do look like heirloom pieces and are stunning in person. Used it this week to make dosa after doing the master class and it was amazing!! The chutneys were so yum that my kids licked it clean! The pan was easy to use and clean and dosa came out perfectly! We have been fans of the podi powder for a while now and my friend just requested it for her Christmas present list!

Awesome Dosa Pan

It was a surprise gift from my husband Murali who purchased this Dosa pan for me! The first time I tried making dosa on this pan, I couldn't believe how good and crispy dosas came out without much effort! I simply loved the pan and the accompanying utensils which are perfect for spreading and picking dosa from the pan. I also signed up for the master class to get any additional tips for making great dosas!
I took the class yesterday with Alak. It was great to get tips on making couple of unusual chutneys that go very well with the dosas. Also, learned a few tips on dosa making such as using only onion to run on the pan without oil to create non stick surface! And that covering the dosa cooks the top so don't need to flip the dosa over and many more tips. Thanks Alak for a wonderful class. It was great to get to know you.

A Timeless Heirloom

I know it’s pricey but this gorgeous trio has already felt worth it! I’ve been trying to make dosas in a cast iron skillet for years now and have immediately noticed a difference since using this dosa trio. Having a pan with such a shallow lip really helps with being able to angle your tools correctly and spread the batter well. It is absolutely worth it to have a custom trio if you plan to make dosas! The tools make it so easy to spread and flip dosas and the pan is seasoned beautifully! The masterclass was also an incredibly helpful starting point. Alak really took the time to troubleshoot with us individually and help us master the art of dosa making. After the class, it really felt like the technique clicked and I made perfectly thin crispy dosas for dinner that night!! I look forward to using it for years to come and hopefully passing it on one day!
